Ingredients:
2 cups diced potatoes (you can use regular or sweet potatoes)
1/2 cup diced bell peppers (various colors)
1/2 cup diced onions
1/2 cup diced zucchini
1/2 cup diced mushrooms
1/2 cup diced tomatoes
2 cloves garlic, minced
2 tablespoons olive oil

Instructions:
Prepare the Vegetables:
Dice the potatoes into small, evenly sized pieces. You can peel them if you prefer, or leave the skins on for added texture and nutrition.
Dice the bell peppers, onions, zucchini, mushrooms, and tomatoes. Set them aside.
Cook the Potatoes:
In a large skillet, heat the olive oil over medium-high heat.
