Vegetarian Breakfast Burrito
Ingredients:
For the Filling:
1/2 cup diced bell peppers (various colors)
1/2 cup diced onions
1/2 cup diced tomatoes
1 cup firm tofu, crumbled (or use scrambled eggs or egg substitute)
1/2 cup black beans, drained and rinsed
1/2 cup corn (fresh, frozen, or canned)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste
1 tablespoon olive oil
For Assembling:
4 large flour tortillas (or whole-grain for added nutrition)
1 cup shredded cheese (cheddar, Monterey Jack, or a vegan cheese)
Salsa, guacamole, or sour cream for topping (optional)
Chopped fresh cilantro for garnish (optional)
Instructions:
Prepare the Filling:
Heat a large skillet over medium heat and add the olive oil.
Add the diced bell peppers and onions. Sauté for 3-5 minutes until they begin to soften.
Add the diced tomatoes and continue to cook for 2-3 minutes until the tomatoes soften and release some juices.
Add the crumbled tofu (or scrambled eggs or egg substitute) to the skillet and cook, stirring frequently. If using tofu, you can season it with cumin, chili powder, salt, and pepper. Continue cooking until it resembles scrambled eggs.
Add the black beans and corn to the skillet and cook for an additional 2-3 minutes. Ensure everything is heated through.
Taste and adjust the seasoning with more salt, pepper, cumin, or chili powder as needed.
Warm the Tortillas:
Place the flour tortillas in a dry skillet or wrap them in a damp paper towel and microwave for 20-30 seconds to warm them.
Assemble the Burritos:
Lay each warm tortilla flat and sprinkle a portion of shredded cheese on each one.
Spoon the tofu and vegetable mixture down the center of each tortilla.
Roll the Burritos:
Fold in the sides of the tortilla to cover the filling.
Starting from the bottom, roll the tortilla up, tucking the sides in as you go, to create a burrito.
Serve:
If desired, you can serve the burritos with salsa, guacamole, or sour cream on the side.
Garnish with chopped fresh cilantro for added flavor.
