Vegetarian Omelette
Ingredients:
2-3 large eggs (or an egg substitute if you prefer)
Salt and pepper to taste
1/4 cup diced bell peppers (various colors)
1/4 cup diced onions
1/4 cup diced mushrooms
1/4 cup diced tomatoes
1/4 cup grated cheese (cheddar, mozzarella, or your choice)
1-2 tablespoons olive oil or butter for cooking
Fresh herbs (such as chopped parsley or chives) for garnish (optional)
Instructions:
Prep the Vegetables: Dice the bell peppers, onions, mushrooms, and tomatoes. You can use other vegetables of your choice as well, such as spinach, zucchini, or spinach.
Whisk the Eggs: Crack the eggs into a bowl and whisk them until the yolks and whites are well combined. Season with a pinch of salt and a dash of pepper.
Heat the Pan: Place a non-stick skillet over medium heat and add 1-2 tablespoons of olive oil or butter. Let it heat up, ensuring it covers the entire pan.
Sauté Vegetables: Add the diced bell peppers, onions, and mushrooms to the skillet. Sauté them for about 3-5 minutes until they become tender. You can add a pinch of salt and pepper for flavor.
Add Tomatoes: Add the diced tomatoes to the pan and cook for an additional 1-2 minutes. Tomatoes should be slightly softened but not overly mushy.
Pour in the Whisked Eggs: Once the vegetables are cooked to your liking, pour the whisked eggs over them in the skillet. Ensure that the eggs spread evenly to cover the vegetables.
Cook the Omelette: Allow the omelette to cook without stirring for a few minutes. You can gently lift the edges with a spatula to let the uncooked egg flow to the sides. Continue cooking until the eggs are mostly set but still slightly runny on top.
Add Cheese: Sprinkle the grated cheese evenly over one-half of the omelette.
Fold and Serve: Carefully fold the other half of the omelette over the cheese side to create a half-moon shape. Gently press down with the spatula to seal the omelette.
Finish Cooking: Cook for an additional minute or two to allow the cheese to melt and the omelette to set completely.
Garnish: If desired, garnish the omelette with fresh herbs like chopped parsley or chives.
Serve: Carefully slide the omelette onto a plate and serve hot. You can enjoy it on its own or with a side of toast, fresh fruit, or a salad.
