Vegetarian Omelette

Ingredients:

  • 2-3 large eggs (or an egg substitute if you prefer)

  • Salt and pepper to taste

  • 1/4 cup diced bell peppers (various colors)

  • 1/4 cup diced onions

  • 1/4 cup diced mushrooms

  • 1/4 cup diced tomatoes

  • 1/4 cup grated cheese (cheddar, mozzarella, or your choice)

  • 1-2 tablespoons olive oil or butter for cooking

  • Fresh herbs (such as chopped parsley or chives) for garnish (optional)

Instructions:

  1. Prep the Vegetables: Dice the bell peppers, onions, mushrooms, and tomatoes. You can use other vegetables of your choice as well, such as spinach, zucchini, or spinach.

  2. Whisk the Eggs: Crack the eggs into a bowl and whisk them until the yolks and whites are well combined. Season with a pinch of salt and a dash of pepper.

  3. Heat the Pan: Place a non-stick skillet over medium heat and add 1-2 tablespoons of olive oil or butter. Let it heat up, ensuring it covers the entire pan.

  4. Sauté Vegetables: Add the diced bell peppers, onions, and mushrooms to the skillet. Sauté them for about 3-5 minutes until they become tender. You can add a pinch of salt and pepper for flavor.

  5. Add Tomatoes: Add the diced tomatoes to the pan and cook for an additional 1-2 minutes. Tomatoes should be slightly softened but not overly mushy.

  6. Pour in the Whisked Eggs: Once the vegetables are cooked to your liking, pour the whisked eggs over them in the skillet. Ensure that the eggs spread evenly to cover the vegetables.

  7. Cook the Omelette: Allow the omelette to cook without stirring for a few minutes. You can gently lift the edges with a spatula to let the uncooked egg flow to the sides. Continue cooking until the eggs are mostly set but still slightly runny on top.

  8. Add Cheese: Sprinkle the grated cheese evenly over one-half of the omelette.

  9. Fold and Serve: Carefully fold the other half of the omelette over the cheese side to create a half-moon shape. Gently press down with the spatula to seal the omelette.

  10. Finish Cooking: Cook for an additional minute or two to allow the cheese to melt and the omelette to set completely.

  11. Garnish: If desired, garnish the omelette with fresh herbs like chopped parsley or chives.

  12. Serve: Carefully slide the omelette onto a plate and serve hot. You can enjoy it on its own or with a side of toast, fresh fruit, or a salad.
